Buffalo Chicken Sliders

Ingredients

  • 2 boneless, skinless chicken breasts
  • ½ cup buttermilk
  • 1 box Shore Lunch® Chicken Breading Mix Spicy Buffalo Style
  • 6 slider buns, cut in half and toasted
  • 6 slices cheddar cheese
  • 3 pieces of leaf lettuce torn in half
  • 2 Roma tomatoes, sliced into ¼ inch slices
  • 2 cups vegetable oil for frying

Instructions

  • 1. Place the chicken breasts onto a cutting board and cut each breast into 3 equal pieces.
  • 2. Pound each chicken slice into ¼ inch pieces.
  • 3. Place each piece of chicken into a shallow dish and cover with the buttermilk.
  • 4. Heat the oil in a large saucepan to 350 °F.
  • 5. Add the Shore Lunch® Chicken Breading Mix to a shallow pan.
  • 6. Remove the chicken from the buttermilk and dredge each piece into the breading mix.
  • 7. Carefully add the chicken pieces, in batches, to the oil. Fry for 3-4 minutes each. Repeat with the remaining chicken.
  • 8. Using long handled tongs remove the chicken from the oil to a plate lined with paper towels.
  • 9. To assemble the sandwiches place a piece of leaf lettuce onto the bottom of each bun. Add a piece of fried chicken, add the cheese, tomato and the top bun. Serve immediately.
