New England Smoky Chicken & Corn Chowder

Enjoy the smoky, savory flavor of the delicious twist on classic clam chowder.

Ingredients

  • 1 tablespoons Butter
  • 1/8 pound Bacon, Raw, Chopped
  • ¾ cup Onion, diced
  • 4 cups Water
  • 4 cups Milk
  • 1 9.2 oz. pkg. Shore Lunch Classic Chicken Noodle Soup Mix
  • ¾ pound Cooked Chicken (or Turkey), medium diced
  • 2½ cups Mashed Potatoes
  • 1 cup Corn
  • ¼ teaspoon Black pepper

Instructions

  • 1. In a suitable soup pot melt butter and sauté Bacon until lightly browned. approximately 5 minutes.
  • 2. Add onions and continue to cook for 1 more minute.
  • 3. Add water and milk and bring to a light boil.
  • 4. Whisk in cooked mashed potatoes and return to a boil.
  • 5. Add Chicken Noodle Soup Mix and cooked chicken and return to a simmer uncovered, stirring often for approximately 15 minutes.
  • 6. Add corn and black pepper.
  • 7. Allow soup to slowly simmer while stirring for additional 5 minutes.
